There are so many vegan options in shops and cafes, that finding a quick vegan lunch isn’t hard these days. However, for various reasons, I prefer to make and take my own lunch to work each day! It’s so much cheaper, uses less plastic and I know exactly what ingredients I’m putting into my food. Some days I may use some leftovers from dinner (which saves even more time as you can cook in bulk), other times I will quickly make something completely from scratch or other times I may use a bit of leftover dinner and add it to something new. All of these lunch box ideas are pretty quick, healthy and involve simple wholefood ingredients!
Although not a ‘lunch’ I always take breakfast to work. I’m not hungry enough to eat when I first get up and if I did, I would be hungry again within a couple of hours and wouldn’t be able to wait until my lunch break! My work breakfast is either overnight oats or yoghurt, muesli and frozen fruit. Some of the regular overnight oats I make are:
- ‘Carrot Cake’ (Oats, cinnamon, nutmeg, all spice maca, flaxseeds, grated carrot and sultanas or raisins)
- Chocolate ( Oats, cinnamon, cacoa powder, frozen blueberries)
- Mixed Berries ( Oats, maca powder, flaxseeds, cinnamon and frozen berries)
- Creamy Vanilla (Oats, cinnamon and vegan yoghurt)
I usually heat the oats up at work and will always add a banana to it and nut butter!
Giant Couscous Salad
A very simple dish of giant couscous, steamed cabbage and mixed raw colourful veggies- carrot, fine beans, red cabbage, cucumber.
Vegan Mac n Cheese
Whenever I make mac n cheese, I will always make a lrge portion, so we can take it to work the next day. I will also add some greens to it (usually lightly steamed broccoli as I like them crunchy and I can steam them over the macaroni pasts) and I add some raw tomatoes and spring onions too. The ingredients, which I blend together, for the ‘cheese’ sauce are:
- 1 x can of butter beans
- Mushrooms (adds more bulk and creaminess!)
- Spring onione
- Tumeric powder
- Smoked paprika (lots!)
- Vegan cheese sauce mix
- Sea salt
- Ground black pepper
- Plant milk
I never measure the spices, I just blend and taste as I go along and add more of whatever I want!
Grilled Tofu and Veggies
Grilled tofu (seasoned with Chinese 5 Spice and soy sauce) with garlic stir-fried broccoli, carrots and red cabbage).

Raw spinach and sugar snap with grilled tofu and pasta.
Mexican Inspired Quinoa
Another dish we love and one where, I will make a large portion for dinner to keep some aside for lunch! I will add some veggies or salad on the side too (this one has cucumber and steamed frozen veg and mushrooms). The quinoa consists of:
- Mixed tri quinoa
- Tomato Salsa
- Black beans
- Frozen sweetcorn
- Smoked paprika and cajun spice
Avocado Chickpea Salad with Mixed Grains
A raw mix of spinach, mushrooms, sugar snap and avocado along with chickpeas and mixed grains.
I hope this can give you some ideas and inspiration for what easy vegan meals to take to work, school, uni, or just to take to a picnic or out on the go! All the veggies can be swapped for whatever you have in your kitchen!
