Healthy Vegan Cauliflower Cheese

Cauliflower cheese is such a comfort food isn’t it? The gooey cheese against the soft cauliflower and the crispy top… mmmm! My mum made the most incredible and very big dish as just one part of our Christmas dinner. She used vegan cheese for this, so it probably isn’t the healthiest as it could be (though far healthier than using dairy cheese!). I wanted to make the dish myself, but with a healthy spin. The main ingredient is actually butter beans! This recipe probably only took 45 mins from start to finish, so not bad at all. You probably will need a blender or hand blender.

Ingredients

For the main

  • 1 x cauliflower
  • 1 cup peas
  • 2 x mushrooms
  • 5 x cherry tomatoes
  • Vegan cheese (optional)

For the sauce

  • Tin/Box of butter beans
  • 1 cup plant/nut milk
  • 3-4 tbsp dairy free cheese sauce powder (I use Free and Easy Cheese Flavour Sauce Mix)
  • 2/3 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp apple cider vinegar
  • Black pepper

Method

  1. Pre-heat oven
  2. Cut whole cauliflower up and boil in pan
  3. Mix dairy free cheese sauce with plant milk until it forms a smooth paste
  4. Add nutritional yeast, garlic powder, cumin, turmeric, black pepper, apple cider vinegar to cheese paste
  5. If using frozen peas, add into the pan with the cauliflower
  6. Rinse butter beans and add to the cheese mix
  7. Blend the cheese sauce and add water until you get a runny-ish consistency
  8. Slice mushrooms
  9. Halve the cherry tomatoes
  10. Once cauliflower is soft- drain
  11. Fill glass oven dish with cauliflower, peas and mushrooms
  12. Mix in sauce with the vegetables
  13. Grate a small amount of vegan cheese on top (this is completely optional!) 
  14. Put the cherry tomatoes on top layer
  15. Put the whole dish in oven for about 25 mins (keep checking and take out when a crispy layer has formed on top)
  16. Once cooked.. serve with a (vegan) side of your choice 😉
